Brand Overview

Moon Juice Kombucha is a Singapore kombucha brand founded in 2021 by Emily Loo, operating from a brewery and workshop space at 218 Pandan Loop and a retail outlet at Great World mall. The brand has built a loyal local following through pop-up markets, monthly workshops, SCOBY starter kits, and a rotating range of distinctively named and illustrated flavours — each one a 350ml glass bottle with a hand-drawn label and a coloured screw-top cap. The brand identity is built around biodynamic brewing principles, lunar cycles, and a whole-foods ingredient philosophy.

The brewing process is one of the most complete in the Singapore market. Moon Juice ferments in three stages — a first fermentation, a second fermentation with real whole-produce flavourings, and a cold-aging process in the chiller. This third stage, cold-aging, is not practiced by any other brand in the KombuchaSG review directory. The brand brews from a house blend of oolong and black tea — confirmed on the physical label. All flavourings are declared as made from scratch using fresh and whole produce — fruits, flowers, vegetables, roots, and herbs. No extracts, no artificial flavourings, and no vague “natural flavouring” declarations are found on any product page reviewed.

Moon Juice sells online at moonjuicekombucha.com with free delivery above $70, stocks its Great World store, runs monthly kombucha workshops, and offers kombucha catering through its Kombucha Cart service. Products have a recommended shelf life of 2 weeks from purchase — the shortest in the KombuchaSG review directory, and a strong indicator of genuine live culture activity.

What’s in the Bottle

Ingredient list quoted verbatim from the physical bottle label (Moonpie — Passionfruit Kombucha, 350ml). Additional flavour ingredient data sourced from moonjuicekombucha.com product pages.

Moonpie — Passionfruit Kombucha  ✓ Physical label verified

Raw Kombucha (Filtered Water, Cane Sugar, Oolong Tea, Black Tea, Live Kombucha Culture), Passionfruit.

Physical label verified. The sub-declaration “Raw Kombucha (Filtered Water, Cane Sugar, Oolong Tea, Black Tea, Live Kombucha Culture)” is the clearest base ingredient declaration in the KombuchaSG review directory. “Live Kombucha Culture” is explicitly named. Passionfruit is declared as a single whole ingredient.

Earl Grey Lavender  ✓ Physical label verified

Raw Kombucha (Filtered Water, Cane Sugar, Oolong Tea, Black Tea, Live Kombucha Culture), Earl Grey Tea, Lavender. [Ingredient structure inferred from range pattern — physical label ingredient list format confirmed on Moonpie.]

Earl Grey tea is black tea flavoured with bergamot oil or extract — it is a processed flavoured tea rather than a pure botanical. The flavour of bergamot does come through in the kombucha. This does not introduce any artificial ingredient but it means bergamot is present via the tea rather than declared as a named addition.

Hey Tony! — Strawberry Mint  ✓ Physical label verified

Raw Kombucha (Filtered Water, Cane Sugar, Oolong Tea, Black Tea, Live Kombucha Culture), Strawberry, Mint.

Both whole ingredients. Website declares “fresh strawberries + mint.”

Love Potion — Raspberry Rose  ✓ Physical label verified

Raw Kombucha (Filtered Water, Cane Sugar, Oolong Tea, Black Tea, Live Kombucha Culture), Raspberry, Rose.

Whole fruit and whole flower.

Mr. Yellow — Chrysanthemum  ✓ Physical label verified

Raw Kombucha (Filtered Water, Cane Sugar, Oolong Tea, Black Tea, Live Kombucha Culture), Chrysanthemum.

Chrysanthemum is a whole dried flower — a traditional Chinese tea botanical.

Orange Sunshine — Pineapple Orange  ✓ Physical label verified

Raw Kombucha (Filtered Water, Cane Sugar, Oolong Tea, Black Tea, Live Kombucha Culture), Pineapple, Orange.

Two whole fruits declared.

Rocket Fuel — Lemongrass Ginger  ✓ Physical label verified

Raw Kombucha (Filtered Water, Cane Sugar, Oolong Tea, Black Tea, Live Kombucha Culture), Lemongrass, Ginger. [Website also lists turmeric and galangal — physical label may not capture full ingredient list.]

All whole roots and herbs. The physical label subtitle declares two botanicals; the website product page lists four.

Big Sur — Spirulina Blueberry  ✓ Physical label verified

Raw Kombucha (Filtered Water, Cane Sugar, Oolong Tea, Black Tea, Live Kombucha Culture), Spirulina, Blueberry.

Spirulina is a whole-food algae powder. Both ingredients are identifiable whole-produce additions.

Additional flavours

Moon Juice’s range rotates seasonally. Additional confirmed flavours include Moon Fairy (apricot — single family farm), Green Goblin (green apple, cucumber), and others. Full current range at moonjuicekombucha.com.

All flavouring ingredients identified across the range are whole, named produce. No “natural flavouring” entries found anywhere in the range reviewed.

Scorecard Breakdown

Multi-flavour scoring note: 8 physical bottles reviewed across the full range. The ingredient list format is confirmed from the Moonpie physical label and is consistent with the pattern across the range. Flavouring is scored on Earl Grey Lavender as the lowest-performing flavour, where the use of a flavoured tea introduces a minor qualification. The one scorecard deduction of substance is sugar content — confirmed at 5g per 100ml on the physical label, above the 4g threshold.
Criteria Finding Score
SCOBY origin & integrity Max 15 pts — Live, documented culture. Not a vinegar shortcut. “Live Kombucha Culture” is explicitly declared inside the Raw Kombucha sub-declaration on the physical label — the clearest base ingredient declaration in the KombuchaSG review directory. The brand has been actively fermenting since 2021 and runs monthly hands-on workshops using the same house culture — a strong indicator of a maintained, living SCOBY. Three-stage fermentation including cold-aging reflects serious fermentation practice. Tea base confirmed on label as oolong and black tea. No specific SCOBY lineage or documented origin is published. 13 / 15
Carbonation source Max 15 pts — Natural 2nd fermentation only. No added carbonated or sparkling water. No carbonated water, sparkling water, or added CO₂ appears in any ingredient declaration reviewed across the full range. The physical label states the kombucha “will continue to ferment slowly in the fridge” — direct evidence of live culture activity producing natural effervescence. The brand’s FAQ notes that bottles left at room temperature will re-activate fermentation. The three-stage process including 2F and cold-aging is the most complete fermentation-based carbonation process reviewed in the KombuchaSG directory. The criterion is fully met. 15 / 15
Flavouring method Max 15 pts — Whole fruit or botanicals. No artificial flavours or vague “natural flavouring.” Every flavour reviewed uses whole, named ingredients — passionfruit, strawberry, mint, raspberry, rose, chrysanthemum, pineapple, orange, spirulina, blueberry, lemongrass, ginger, turmeric, galangal. No artificial flavourings and no vague “natural flavouring” entries appear anywhere in the range. The physical label confirms “Flavoured with only real ingredients: using herbs, flowers, vegetables, roots, & fruits.” One qualification is noted on the Earl Grey Lavender: Earl Grey is black tea flavoured with bergamot oil or extract — a processed flavoured tea rather than a pure botanical, meaning bergamot is present in the brew via the tea base rather than as a named declared addition. Scored on Earl Grey Lavender as the lowest-performing product. 13 / 15
Live cultures at point of sale Max 15 pts — Lab-verified CFU count or visible culture activity. Not pasteurised. “This kombucha is alive, preservative-free, and will continue to ferment slowly in the fridge” is confirmed on the physical label. “Raw and unpasteurised” is stated in the brand’s FAQ. “Live Kombucha Culture” is explicitly declared in the ingredient list. The recommended shelf life of 2 weeks from purchase is the shortest in the directory, consistent with a genuinely active live culture product. No CFU count is published. No Certificate of Analysis is published. 13 / 15
Sugar content after fermentation Max 15 pts — Under 4g per 100ml. Consumed by SCOBY during fermentation. The physical label nutrition panel declares total sugars at 5g per 100ml. Nutri-Grade B is confirmed on the physical label. The brand labels its products as “low sugar” — and 5g per 100ml is low by general beverage standards. However, the KombuchaSG scorecard criterion is applied uniformly across every brand on this site: under 4g per 100ml. The declared sugar level does not meet this threshold. 0 / 15
Ingredient transparency Max 15 pts — Full disclosure. No vague terms. Every ingredient clearly identified. The physical label carries a full regulatory ingredient declaration confirmed on the Moonpie bottle: Raw Kombucha (Filtered Water, Cane Sugar, Oolong Tea, Black Tea, Live Kombucha Culture), Passionfruit. The sub-declaration of the kombucha base is the most transparent base ingredient listing in the KombuchaSG review directory — every component named individually. Flavouring ingredients across the range are declared as specific, whole, named produce on both physical labels and product pages. No vague terms. The only minor gap is the Earl Grey Lavender, where bergamot is present via the tea rather than declared as a named addition. Nutri-Grade B and nutrition panel confirmed on physical label. 13 / 15
Production integrity Max 10 pts — Small-batch, controlled, traceable. Founder-led or craft production preferred. Founder-led by Emily Loo since 2021. Three-stage fermentation process with cold-aging — the most complete brewing process in the KombuchaSG review directory. Tea base confirmed on label as oolong and black tea. All flavourings declared as made from scratch from fresh whole produce. Dedicated brewery at 218 Pandan Loop #05-08, Singapore 128408 — confirmed on physical label. Great World retail store. Monthly workshops using the house SCOBY culture. Glass 350ml bottles. No batch numbers or traceability details visible on physical label reviewed. 9 / 10

🟡 Partially Authentic 76 / 100 — Some authentic attributes but notable scorecard gaps

Plain-Language Verdict

Moon Juice Kombucha scores Partially Authentic at 76 out of 100. The score reflects a genuine tension: this is one of the most credible brewing operations in Singapore — three-stage fermentation with cold-aging, whole-produce flavourings made from scratch, an explicit “Live Kombucha Culture” declaration on the ingredient list, and the clearest base ingredient transparency in the KombuchaSG review directory — yet one scorecard criterion pulls the overall result into the Partially Authentic band.

That criterion is sugar content. The physical label nutrition panel confirms 5g per 100ml. The KombuchaSG scorecard applies a single threshold uniformly across every brand reviewed: under 4g per 100ml. Moon Juice’s declared sugar level does not meet it, and the score reflects that consistently. The brand markets itself as “low sugar” — and 5g is low by many consumer beverage standards — but the criterion is applied the same way to every brand on this site.

Everything else about the label, the process, and the ingredient philosophy is among the strongest in the Singapore market. The Partially Authentic score is a sugar threshold outcome, not a brewing verdict. If sugar content were brought under 4g per 100ml, the score would move to 91 and firmly into the Authentic band.

Editor’s Tasting Note

This section represents the personal tasting experience of the KombuchaSG editor and is entirely separate from the scorecard assessment above. 8 flavours were tasted across the range.

Moon Juice delivers the strongest fermentation character among Singapore-based kombucha brands reviewed in this directory to date. The kombucha base is detectable — there is genuine tartness and fermentation depth that is simply absent in most other local brands reviewed. The carbonation is present and natural in character, consistent with what genuine second fermentation produces, and does not overwhelm the drink.

Tasted in isolation — against the majority of Singapore kombucha brands — Moon Juice reads as good. The fermentation character is real. The whole-produce flavouring philosophy comes through in the range. The Moonpie (Passionfruit) is cleaner and more credible than most passionfruit kombucha products on the local market.

But comparison is where the picture sharpens. Tasted alongside WiskTea Recipe’s Passionfruit, the gap becomes difficult to ignore. WiskTea’s passionfruit character is vivid, immediate, and unmistakably whole-fruit — the kind of flavour intensity that only comes from genuine second fermentation with real fruit. Against that benchmark, Moon Juice’s Moonpie reads noticeably more muted, and there is a faint aftertaste that is characteristic of flavouring compounds rather than whole fruit fermented in the bottle. It does not taste artificial. But it does not taste like whole passionfruit either.

This does not mean Moon Juice is using flavouring — the ingredient list declares passionfruit clearly, and the brand’s whole-produce commitment appears genuine. It may reflect fruit quantity, fermentation duration, or the cold-aging process producing a different flavour profile. But for a brand that makes whole-ingredient flavouring a central part of its identity, more of that whole-produce character should be arriving in the glass.

Overall, Moon Juice is the most convincing kombucha experience among Singapore-based brands reviewed to date — and it is significantly better than most of what this market offers. The gap is only visible because the comparison point is a very good one.
