Châteaux Kombucha — Review & Authenticity Score
Reviewed using the KombuchaSG 7-criteria authenticity scorecard. Same format, same criteria as every other brand on this site. All 8 flavours verified from physical bottles purchased at the Rowell Road flagship store.
Brand Overview
Châteaux is a Singapore premium craft kombucha brand founded in 2020 by husband-and-wife team Christopher and Geok Keng, operating under Cleverly Holdings Pte Ltd. The brand describes itself as Singapore’s first specialty kombucha store and positions its range firmly at the premium end of the local market — small-batch, craft-brewed, and designed for pairing with food and hospitality occasions. The couple’s stated ambition is to become Singapore’s TWG of kombucha.
Brewing is handled by Geok Keng and is described as a hands-on daily ritual in which each batch is tested against the founders’ internal standards before bottling. A defining characteristic of Châteaux’s approach is its tea base: Eastern teas — oolong and green teas — rather than the black tea most commonly used in Western kombucha. The Blanc Collection uses single fermentation only, allowing the tea’s natural character to define the drink. The Signature Brew range undergoes a second fermentation with real botanicals, fruits, and herbs.
In 2025, Châteaux relocated its production from Novena to a purpose-built 2,000 sq ft microbrewery at 7 Mandai Estate, Mandai Estate 07-01. Monthly production capacity expanded to over 3,000 bottles. The brand’s flagship store operates at 99 Rowell Road (Wed–Thu 12–6pm, Fri–Sat 12–9pm). Its client list includes French luxury jeweller Boucheron at Marina Bay Sands, The Marmalade Pantry, Mr Bucket Chocolaterie, and the Mercedes-Benz Café at Alexandra. Revenue grew over 80% from 2024 to 2025.

What’s in the Bottle
All ingredient lists are quoted verbatim from physical bottle labels purchased at the Châteaux flagship store, 99 Rowell Road. Flavours are arranged alphabetically within each range. All data has been independently verified.
Note on “TIME” as a declared ingredient: Every Châteaux bottle reviewed lists “TIME” as the first entry in the ingredient declaration. This appears consistently across all 8 bottles and both ranges. “TIME” is not a food ingredient and does not belong in a regulatory ingredient list where ingredients are declared in descending order of weight. It appears to be a deliberate brand expression, positioning fermentation time as the primary input in their process. The practice is noted factually. See the scorecard section for its impact on the transparency criterion.

Scorecard Breakdown
| Criteria | Finding | Score |
|---|---|---|
| SCOBY origin & integrity Max 15 pts — Live, documented culture. Not a vinegar shortcut. | “Kombucha Culture” is declared as an ingredient across all 8 physically verified bottles. “Marvellously Live Cultures Included” and “Due to the live cultures” are declared on all labels. The brand has been producing since 2020 with a founder-led, hands-on daily brewing practice. The Brewing Starter Kit product includes a live SCOBY pellicle and starter liquid, confirming the maintenance of an active culture. Specific SCOBY lineage or origin documentation is not published on packaging or the brand website. | 11 / 15 |
| Carbonation source Max 15 pts — Natural 2nd fermentation only. No added carbonated or sparkling water. | No carbonated water, sparkling water, or added CO₂ appears in any ingredient list across all 8 physically verified bottles. The Blanc Collection is single-fermented pure tea; the Signature Brew undergoes a second fermentation with real botanicals — both processes produce natural carbonation. The label warning “Do not shake” and the note that taste varies from bottle to bottle are both consistent with active natural fermentation. Carbonation source is definitively confirmed as natural across the entire range. | 15 / 15 |
| Flavouring method Max 15 pts — Whole fruit or botanicals. No artificial flavours or vague “natural flavouring.” | The Blanc Collection uses no added flavouring — the tea itself is the sole flavour source. All Signature Brew flavouring ingredients are whole, identifiable botanicals: Blueberry, Basil, Raspberry, Sage, Passionfruit, Lime, Mint, Butterfly Peaflower, Raw Honey, and Yuzu. No artificial flavourings, extracts, concentrates, or vague “natural flavouring” terms appear on any label reviewed. The Ooh La La front label describes tasting notes from the tea — orange peel, cinnamon, plum, malt, barley — but these are flavour characteristics of the roasted oolong itself, not added ingredients, and the ingredient list is consistent with this. This is one of the cleanest flavouring profiles reviewed on this site. | 15 / 15 |
| Live cultures at point of sale Max 15 pts — Lab-verified CFU count or visible culture activity. Not pasteurised. | “100% Raw & Live Kombucha” is declared on all physically reviewed bottles. “Marvellously Live Cultures Included” and “Due to the live cultures” are stated on labels across both ranges. The FAQ advises against opening room-temperature bottles — consistent with active fermentation pressure in the bottle. No explicit “unpasteurised” declaration was confirmed on any physical label reviewed. No CFU count is published on any label or the brand website. | 12 / 15 |
| Sugar content after fermentation Max 15 pts — Under 4g per 100ml. Consumed by SCOBY during fermentation. | Nutri-Grade B is confirmed on the physical labels of Blanc and Honey Yuzu, indicating sugar content between 1g and 5g per 100ml. “Low Sugar” is declared on all Signature Brew bottles. No numeric sugar per 100ml appears on any bottle reviewed across the full range. Nutri-Grade B is consistent with sugar content below the 4g threshold but does not confirm it — the 4g criterion requires exact numeric verification. The Blanc Collection, as single-fermented pure tea kombucha, would be expected to be very low in residual sugar, though this cannot be confirmed without a nutrition panel. | 12 / 15 |
| Ingredient transparency Max 15 pts — Full disclosure. No vague terms. Every ingredient clearly identified. | Across all 8 bottles, the actual food ingredients are clearly and specifically named — there are no vague terms, no “natural flavouring” entries, and no ambiguous compound names. The single point of friction across the entire range is the listing of “TIME” as the first entry in every ingredient declaration. Ingredient lists in Singapore are required to declare food ingredients in descending order of weight. “TIME” is not a food ingredient and does not belong in a regulatory ingredient list. It is a brand expression of the value placed on fermentation duration, but its presence in the formal ingredient declaration introduces an element that does not conform to standard labelling practice. All actual food ingredients are identifiable and complete. | 12 / 15 |
| Production integrity Max 10 pts — Small-batch, controlled, traceable. Founder-led or craft production preferred. | Couple-run operation with Geok Keng as hands-on brewmaster. Purpose-built 2,000 sq ft dedicated microbrewery at Mandai Estate, Singapore, established 2025. All bottles carry printed batch numbers — confirmed across all 8 physically verified bottles — making Châteaux the only brand in the KombuchaSG directory to date that publishes batch traceability on every label. Tea sourcing from Eastern origins; the Blanc Collection specifies “Premium Green Tea” and uses hojicha and roasted oolong as distinct varietal bases. Flagship physical store at Rowell Road with on-tap service. Bespoke batch production for premium hospitality clients. | 9 / 10 |
| Total Score | 86 / 100 | |
Plain-Language Verdict
Châteaux scores well across the criteria that matter most. No carbonated water or sparkling water appears in any of the 8 physically verified bottles — the carbonation criterion is met in full. All flavouring ingredients across the Signature Brew range are whole, named botanicals: real fruits, herbs, and flowers with no artificial flavourings and no vague “natural flavouring” declarations anywhere in the range. The Blanc Collection takes this further, offering pure single-fermented tea kombucha with no added flavouring at all — an uncommon and credible product category in Singapore. Every bottle carries a batch number, making Châteaux the first brand in this review directory to publish batch traceability on its packaging.
Two criteria are scored conservatively. Sugar content is supported by Nutri-Grade B declarations on two flavours and “Low Sugar” claims across the Signature Brew range, but no numeric sugar per 100ml appears on any bottle. Nutri-Grade B is consistent with the 4g threshold but does not confirm it. The ingredient transparency score reflects the “TIME” declaration — a brand expression that is deliberately placed in the formal ingredient list where food ingredients are required by regulation. All actual food ingredients are clean, specific, and complete. The deduction is for the non-food declaration, not for any ingredient concern.
Overall, Châteaux presents one of the strongest and most consistent brand profiles reviewed on this site. The range is honest, clean, and built around identifiable quality ingredients. The Ooh La La label’s description of tasting notes as “orange peel, cinnamon, plum, malt and barley” — which do not appear in the ingredient list — is worth noting: these are natural flavour characteristics of the roasted oolong tea, and the ingredient list is entirely consistent with that. An educated reader will understand this; others may initially expect to see those items listed as added ingredients.
Editor’s Tasting Note
This section represents the personal tasting experience of the KombuchaSG editor and is entirely separate from the scorecard assessment above, which is based solely on declared label information. Tasting notes are subjective and reflect one individual’s experience. Both the initial tasting and a subsequent second tasting are reflected here. Readers are encouraged to taste and form their own judgement.
Châteaux has something Aboocha does not — there is a detectable fermentation character in the drink. A subtle kombucha note is present. That is worth stating clearly, because it is the baseline of what this category should taste like, and not every Singapore brand meets it.
However, the carbonation is the dominant sensory experience across the range. It is high in volume and sharp in character — in a way that overwhelms rather than complements the drink. For a brand positioned at the premium end of the market, the carbonation read more as sparkling water than as the fine, integrated effervescence that naturally fermented kombucha produces in bottle. This was consistent across both the Blanc Collection and the Signature Brew range. The ingredient lists do not declare added carbonated water, and the scorecard scores accordingly. The tasting experience is noted separately as a personal observation.
The Blanc Collection — marketed on the quality of its tea base, with the premium green tea and roasted oolong as the centrepiece — did not deliver a discernible tea character to this taster. For a range positioned around premium Eastern teas sourced from Taiwan, China, and Japan, the expectation is that the tea comes through. It did not.
The Signature Brew flavours were similarly difficult to identify. Couture Passion, made with passionfruit, did not taste of passionfruit. Across the remaining flavours — blueberry basil, raspberry sage, butterfly pea flower — the individual botanical characters were not distinguishable. What was present was a broadly sweet, carbonated drink with a faint fermented base. The label ingredients are clean and credible; the translation to flavour was not evident to this taster.
On a second tasting, a finding was confirmed that was consistent with the experience of Aboocha: Châteaux leaves a lingering aftertaste on the tongue. The character of this aftertaste is chemical and flat — not the pleasant residual tartness of genuine fermentation, but a synthetic sensation that persists after swallowing. It is comparable to the aftertaste of a carbonated soft drink. Real kombucha brewed from whole ingredients and fully fermented does not produce this kind of aftertaste. The ingredient lists for Châteaux are clean and specific — the cause cannot be identified from the label. The observation is noted here as a consistent personal finding across two separate tasting sessions.
These observations are personal and cannot be verified against declared ingredients. The scorecard scores what the labels declare. Readers who are curious about the premium tea positioning in particular are encouraged to taste the Blanc Collection at the Rowell Road store, where it can also be served on tap, and judge for themselves.
